A Rich Historical Legacy

The legacy of Mlin Montanari goes beyond just exceptional cuisine. Our restaurant is situated on a site steeped in history, dating back to the mid-19th century. In 1850 Šibenik witnessed the opening of a steam mill - the first of its kind in Dalmatia. Owned by the visionary Italian entrepreneur Giovanni Montanari, this mill quickly became the largest industrial facility in Šibenik during that era.

In 1868 Montanari expanded his operations by acquiring the garden and economic buildings of the abandoned Dominican monastery by the sea. This strategic move not only enhanced the mill's production capacity but also resulted in the construction of an impressive residential building that still stands today as a testament to his ambition and foresight.

Fast forward to 1875, and the luxurious salon on the second floor of Montanari's complex welcomed the political and military elite during the visit of Emperor Franz Joseph I to Šibenik. This historic gathering marked a significant moment in our city’s timeline, showcasing the grandeur of Montanari’s establishment.

The Legacy Continues in 2023

Today the expanded Montanari factory remains a notable landmark in Šibenik. With preserved plans indicating a large complex of seven buildings, the central structure stands as the heart of our restaurant. Originally designed for residence and production, this picturesque setting allows guests to revel in the fascinating history that surrounds them.

The intricate layout, once bustling with horse-drawn carts laden with grain, reflects a time when the main production facility was powered by a steam engine, grinding grain and producing pasta. Our restaurant now embraces this rich heritage, serving as a bridge between the past and present.
